WHY BEEF RAISED ON THE NEBRASKA SAND HILLS?
The Sand Hills of Nebraska offer some of the best grasses available for raising beef. What that means to you is that the grass our cattle eat are “hard” grasses, which means the grass is packed with protein and nutrients that cattle require to obtain the premium flavoring and texture desired by beef eaters around the world. Our cattle don’t require supplemental feedings of corn and grain to obtain their necessary daily intake of calories and nutrients, they get more than they need from the grass alone. This ensures you receive great tasting beef every time.

DESCRIPTION OF TASTE/TEXTURE:
The grass fed meat has more of a game taste than most beef. While most customers do not refer to it as “game meat,” most of them do notice a game flavor, but is not overpowering. Since grass fed cattle receive no corn or grain, there is very little marbling in the meat. The marbling effect of meat comes from fat deposits in the meat, which are a result of the corn or grain that is fed to cattle in the feedlot. There is usually much less “marbling” in the meat because it is leaner. As a result of less marbling, grass fed meat usually ranks as “Select” or “Choice” beef according to the USDA.
HOW MUCH MEAT DO I GET?
That depends on how big the steer is when he goes to the butcher shop. In general, the packaged meat is about 1/3 of the live weight of the cattle. Most of our grass fed cattle go to the butcher shop weighing around 950 lbs. This would be approximately 315-320 lbs. of packaged meat.

Other: Ground Hamburger, Heart, Liver, Tongue, Tail
However, if you have a family favorite or special request, we will do what we can to honor that request. Please note that any additional cost will need to be passed on.
